Winter — Chapter Four.
Golden Madeleine, pour un petit goûter.
When missing the sunshine,
Olive oil brings le Sud,
Honey, the good mood,
And lemon zest

The Actors
- 45 g melted butter
- 35 g olive oil
- 2 eggs
- 50 g brown sugar
- 20 g honey
- Lemon zest
- 1 vanilla bean
- 1 tbsp milk (Cyril Lignac touch)
- 130 g all-purpose flour
- 4 g baking powder
- Glaze: 1 tbsp honey + a splash of hot water + lemon zest
The Story
First things first, we melt the butter, and leave it to cool de coté.
In a bowl, work gently with your hand the sugar, lemon zest, and vanilla bean, pour réveiller les parfums.
Then add the eggs and honey and whisk le tout. Gradually add the flour and baking powder (sifted) while mixing gently. Pour the melted butter in the same way and continue mixing.
Finally, fill the madeleine molds with the batter. Let them cool in the fridge up to 3 hours.
Bake in a well-preheated oven for about 10-11 minutes at 180°C. Until they are golden, and the sunshine is showing.
Finish with glaze while they are warm, and enjoy.
The Curtain Call
Madeleines are delicate, so their shelf life is only up to 2 days. You can also reheat them in the oven for 2-3 minutes for a little refresh.
