Winter – Chapter Five.
Inspired by a North African cold carrot salad called “your mummy the fairy”, which is funny but doesn’t have any hidden meanings.
The Fairy Salad lived all her life along the Mediterranean coast of Africa, cooling its inhabitants.
When she went up during Germany’s cold winters, she became the Fairy Soup.
Carrots and dried tomatoes for the sun.
Parsnip because they look like carrots (and they were on promotion).
Caraway and Cumin for warmth.
The Actors
- 1 Onion
- 2 garlic gloves
- Olive oil
- 2 dried tomatoes
- 5 carrots
- 2 parsnips
- Salt
- Caraway and Cumin
- One cup red lentils
- Hot water
- Lemon juice
The Story
First, sauté the onions, garlic, and dried tomatoes in olive oil for about 3 minutes, followed by the chopped carrots and parsnips, a sprinkle of salt, and let them cook along with occasional stirring for another 8-9 minutes. Just enough for them to become tender and release their flavors and warmth.
Then, add the lentils and cover with water, and let it simmer for 15 minutes until the sun rises and la magie opère. (Of course, if you use cooked lentils, add them in the end.)
Finally, when all is done, add caraway and cumin at the very end because they tend to become bitter if boiled. A squeeze of lemon for the peps, salt, and blend it or leave it, depending on your mood.
A drizzle of cream and parmesan on top is always a good idea.
